Great thread, by the way.
This is going to be hard, narrowing it down to ten, but here goes.
In no particular order:
1. Heiko Fischer, short program, 1984 Olympic Games
2. Jill Trenary, long program, 1988 US Nationals
3. Caryn Kadavy, long program, 1987 Worlds
4. Underhill & Martini, long program, 1984 Worlds
5. Alexandr Fadeev, long program, 1989 Europeans
6. Elizabeth Manley, long program, 1986 St. Ivel International
7. Stephane Lambriel, long program, 2001 Europeans
8. Lucinda Ruh, long program, 1999 Worlds
9. The Duchesnays, free dance, 1990 Worlds
10. Midori Ito, long program, 1990 Worlds
That was tough.

Although I haven't been able to see that many competitions up until now (mostly just Olympics!), these are the performances I loved the best. I'm not technically very knowledgeable, so these performances might not stick out in other people's minds as the best ever, but they are the ones that inspired me to love figure skating, or just get warm feelings inside, or make my eyes brim with tears, regardless of whether they might have been the most difficult or the best.
1. Midori Ito, 1988 Olympic LP. This program started my love of figure skating.
2. Michelle Kwan, 2003 Worlds LP.
3. Michelle Kwan, 2002 Olympic Exhibition. Such a truly lovely performance after a disappointing competition.
4. Elizabeth Manley, 1988 Olympic LP.
5. Debi Thomas, 1988 Olympic Exhibition. See #3
6. Sarah Hughes, 2002 Olympic LP. Although I desperately wanted Michelle to win, I have to admit, Sarah did great.
7. Midori Ito, 1992 Olympic exhibition.
8. Alexei Yagudin, 2002 Olympic SP.
9. Nancy Kerrigan, 1994 Olympic LP; thought she should have won
10. Fumie Saguri, 2002 Olympic LP
I've never seen the Michelle Kwan 1998 Nationals LP that I've heard so much about. Would really like to, somehow.

Torville & Dean, Bolero
Klimova & Ponomarenko, that vampire number
Anything skated by Gary Beacom
I know that's not ten but those are my three faves, I'll have to think hard to narrow down the other seven.
