Since apparently I'm a little lost on the new scoring system, what do Levels 1, 2 and 3 mean when talking about spirals, jumps, etc...and where is there an explanation of all this online?

In general levels 1,2,3 refer to the difficulty of an element. The harder the number the higher the point value. Remember the Technical Specialist, "caller", assesses how difficult an element is (it's level). The judges assess the execution (how well it's done) and do not get to say what they saw only how good it was.
